Growing up my mom worked at the airport, so we'd always get these treats from some of the airlines. Lucky for us, she mostly dealt with international airlines, so we'd get a lot of cool treats that most people weren't aware of. One of the treats were Biscoff cookies. These are truly, light and crispy, but full of flavor! I remember I'd pack them with my lunch, or have them as an afterschool snack!
Up until recently, I had forgotten all about these cookies. Then recipes using Biscoff spread kept popping up on my Google reader and I KNEW I had to get my hands on some!! I searched everywhere (Wegmans, even the Trader Joe's for their Speculoos spread that is supposed to be their version of Biscoff spread), but I could never find them anywhere! Amazon was asking $20 for two jars! I thought that was a bit much, especially because I hadn't had the spread version yet and didn't know if I'd like it (silly me)! I happened to be at World Market over the weekend and found two jars! THE LAST TWO! So I scooped them up, at only $4.99 a jar and went on my way!! As soon as I opened the jar up and grabbed a spoon, I was totally reminded of these cookies I ate as a child!
One of the posts that originally caught my eye was this one that I bookmarked by Picky Palate. I wanted it to be the first thing I made with the spread, but unfortunately my husband doesn't like white chocolate! I'm not sure why I didn't think to just substitute the white chocolates for milk chocolate, but instead decided to just go with this recipe by Kirbie's Cravings! It was simple and easy, and since I was making the cookies while trying to make dinner at the same time it was the most practical since it didn't involve me trying to do too many things at once! I just dumped all the ingredients together and mixed, rolled, and baked! I ended up baking the cookies a bit longer (closer to 10 minutes) because I like my cookies more on the crispy side, than chewy! The flavor was good, and definitely a fun twist to a traditional chocolate chip cookie. I think my next Biscoff recipe will be these!
Biscoff Chocolate Chip Cookies (Recipe from Kirbie's Cravings)
- 1/2 cup unsalted butter, softened
- 1/2 cup sugar
- 1/2 cup light brown sugar
- 1/2 cup Biscoff spread
- 1 egg
- 1 tsp vanilla
- 1 1/2 cup flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup chocolate chips
- Preheat oven to 350 degrees
- Cream granulated sugar and brown sugar with butter. Mix in egg, vanilla, and Biscoff spread
- In a separate bowl, combine flour, baking soda, and salt. Add in wet mixture. Fold in chocolate chips.
- Drop by tablespoon, or roll into dough ball and bake between 6-10 minutes depending on desired chewiness/crispiness!
**I also wanted to point out, that although Biscoff spread looks a lot like peanut butter, it is a nut free product! This makes it a great alternative to peanut butter, especially if you have children in a nut-free school! The spread can be used on bread, just like a PB&J sandwich, so if you are looking for other alternatives for school lunches, this will be sure to be a treat! It does however contain wheat and soy so if you have children who have allergies to that then obviously this is not a good substitute!
