Wasabi Shrimp Salad
during our trip to Michigan, we went to a brewhouse that had a wasabi shrimp salad. it sounded like the tastiest thing on the menu, and i was a bit disappointed after i ate it because the flavors were a bit off to me and i decided i could make a tastier version at home! (the version at the restaurant was just plain cold shrimp, with a wasabi dressing, bamboo shoots, and a few wasabi peas, on a bed of spinach). i decided that it would probably taste better if the shrimp had more of the wasabi flavor it it and then a lighter, asian flavored dressing. i found this recipe for panko wasabi crusted shrimp that sounded like it would be perfect! since we had some calamari rings in the freezer as well, i decided to add some calamari into the salad. (i love seafood, so shrimp AND calamari- that's a huge plus in my book for my dinner salad!) for the calamari rings i didn't use the same wasabi crust recipe, i ended up using a wasabi edamame dressing that we had. i topped it off with a ginger sesame dressing (bottled and pretty easy to find in any brand)! since i love veggies, i just topped it with some sliced avocado, fresh bell pepper from our garden, and some tomatoes! such a perfect, quick and easy dinner-light but filling!

i’m so glad i found your blog,such a fun read! it’s already been added to my google reader, and of course, this shrimp recipe is already embedded in my brain and i will definitely be making it again! mmm, maybe even with more wasabi next time!
