Birthday Breakfast

i decided to treat myself to something yummy for my birthday today! (ahhhh two years closer to the big 3-0!!!)

i've been wanting to try a recipe out for cinnamon bun bread so today was the perfect excuse to indulge in a sweet treat for breakfast! i found the recipe here which was also an adaptation from this recipe!

Cinnamon Bun Bread

  • 1 1/2 cups flour
  • 1/3 cup sugar
  • 1/4 tsp salt
  • 2 packages rapid rise yeast (4tsp)
  • 2/3 cup warm milk
  • 3 tbsp vegetable oil
  • 1/2 tsp vanilla extract
  • 1 egg

topping:

  • 3 tbsp butter (softened)
  • 3/4 cup brown sugar
  • 1 1/2 tsp cinnamon

icing:

  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1 tbsp butter
  • 1/2 tsp vanilla extract

directions:

  • coat an 8x8 pan with nonstick spray
  • combine flour, salt, sugar in a bowl
  • mix the warm milk with yeast, oil, vanilla extract and egg
  • combine both dry and wet ingredients until smooth and pour into baking dish
  • let the dough rest for approximately 15 minutes
  • cut the 3 tablespoons of butter into the brown sugar and cinnamon so it is a crumbly mixture
  • pour cinnamon mixture onto the dough (i started with half of the mixture and swirled it into the dough, and then sprinkled the rest on top)
  • bake at 350 degrees for 30 minutes (you don't need to preheat the oven!)
  • while the bread is cooling, mix the icing ingredients and drizzle on top once the bread has cooled!

it was definitely very sweet! but yummy!! i didn't realize that when i was looking at both recipes while i was making it that the first recipe put the vanilla in the dough and the second recipe put the vanilla in the icing, and of course, me not paying attention, put vanilla in both!! oh well! didn't hurt! this was definitely a lot easier and less time consuming when craving cinnamon rolls!
