Grilled Pork with Corn Relish

the best part of summer is being able to grill! makes dinner so much easier especially since it’s always my hubby’s job to do the grilling! all i have to do is marinate and relax! :) since i’ve been trying to cut back on the amount of carbs that we eat i’m always looking for different meat recipes. (trust me, the carb cutting hasn’t been so fun. i’m asian, i could eat rice or noodles every night and be perfectly content! now not so much! my tummy is flatter, but i tell you what, i’m already hungry again about two hours after dinner!)

i found this recipe from food gawker the other day after trying to decide all morning what i’d be doing with the pork chops i just bought! i thought i’d share my version today since it’s such a huge grilling day- but much healthier than the traditional burgers and brats! :)

the recipe is SUPER easy! you just season the pork with salt and pepper (i actually used the Janes Crazy Mixed Up Salt) and some garlic powder, and grill.

the corn relish that i made consisted of 2 ears of corn (grilled and then cut off the cob once it’s cooled), 1/2 a green pepper diced, 2 diced plum tomatoes, and  2 green onions, thinly sliced. (the recipe i originally found had half an avocado as well, but we didn’t have any on hand and i didn’t want to run to the store for just that, but i REALLY WISHED that i had it-i always try and put avocados in anything i can!)  just mix all that up with juice from half of a lime and a sprinkle of salt, and voila, you’re done!
