Cioppino

to say that i love seafood would be an understatement! lobster, shrimp, mussels…you name it, i love it!!

my husband and i love cioppino . there’s a place in San Diego that makes the absolute yummiest cioppino! we’ve only been to San Diego twice, but it would definitely make it worth flying back out west again!! it’s a restaurant in Seaport Village called Edgewater Grill. i think they call it a seafood medley, but it’s essentially the same thing. they also serve it with fettucine (the serving is just ginormous that i don’t even think my husband ever gets to the pasta!) Costco used to have a cioppino in their frozen section that i used to stock up on just for those nights where i needed a quick dinner. needless to say, they don’t carry it anymore! after a bit of concocting i managed to make up my own recipe that was good enough it would satisfy my husband and i’s cioppino cravings!

Ingredients:

1/2 medium onion (chopped)

1 clove garlic (chopped)

2 tbsp olive oil

1/4 cup parsley (chopped)

2 bay leaves

1 tsp basil

1/2 tsp oregano

1/4 tsp paprika

1/4 tsp cayenne pepper

1/4 tsp crushed red pepper (optional, but definitely tastes better with some spice to it!)

4 oz tomato sauce

14 oz diced tomatoes

1/2 cup white wine

3/4 cup water

salt and pepper to taste

Seafood:

1 cod fillet (halibut or sea bass works well too)

1 dozen shrimp

1 package mussels in tomato garlic sauce (you can just get a package of regular mussels but if i’m using the frozen kind i like to get the prepackaged kind that is already flavored)

optional seafood:

usually i am all about seafood, but with the fish, shrimp, and mussels, it’s more than plenty for the seafood stew…BUT you can also add scallops, clams, and calamari!

Directions:

  • saute the onion and garlic in the olive oil
  • add parsley, diced tomatoes, tomato sauce, herbs, wine, and water
  • simmer for about 40 minutes
  • while the broth is simmering, rinse seafood
  • layer the seafood in the pot, putting the mussels on top, and cover
  • cook for another 20 minutes or until seafood is fully cooked
  • serve with a crusty bread, or pasta!
