Spinach feta omelet
i’ve been on the self challenge for about three weeks now and i am happy to say that i’ve dropped about 8 pounds! pretty good for not really exercising!! i’ve been really good about keeping track of my calories and making sure that i don’t go overboard! i’ve also cut out soda and juice (except whenever i am eating out). the first week i was on the self challenge i was really good about exercising, but since then my puppy has been fixed and i’ve got a brand new niece to play with so i’ve been otherwise occupied! im hoping once it starts getting warmer i’ll get my butt back in shape and get back out there!! my goal is to walk to my sisters house several times a week (its about a 3 min drive by car, but my sister thinks it’ll be almost a two hour walk there! we’ll see!) so, in honor of losing weight i’ve decided to splurge a little! this morning i was craving an omelet in a big way…and ended up making a very yummy spinach and feta omelet! and really, not so unhealthy! i think it ended up being less than 200 calories, and kept me full for quite some time! it was so very easy to make too…none of that fussy stuff!
2 eggs
1 thin slice ham
1 cup fresh spinach, chopped up
1 tbsp feta cheese
1 small roma tomato, chopped
salt and pepper to taste
whisk the eggs, pour into a nonstick pan, throw the ingredients in and in a few minutes it was done!
